I was craving some major pancake deliciousness. In my handy dandy Paleo Indulgences book by Tammy Credicott, she introduced Paleo Gingerbread Pancakes. YUM!! They were fantastic.
This was the second time we’d had them and I decided to get wise about it and put shredded coconut on them with agave nectar. Again. YUM!!
I don’t like posting recipes from a cookbook because of the copyright, and frankly, you need to go out and buy that book! It’s that good. But someone did the honors to post the recipe, so I’m going to share it that way. SHHHHH. Don’t tell.
Almond flour is not easy to find here so we put almonds in a coffee grinder and ground them ourselves. We also tried them in the food processor, in which they didn’t get ground quite fine enough but we used them anyway. The pancakes came out, errrr… nutty. But still fantastic. Enjoy!
The book comes with a recipe for cinnamon syrup. Someday we’ll try that too. 🙂
